FDA Seeks to Define 'Gluten-Free'

Though the label "gluten-free" can be seen on food packaging throughout grocery stores, the term currently has no agreed-upon definition. For consumers with Celiac disease, even trace amounts of gluten can present serious issues, and the sale of gluten-free products has risen nearly 800 percent since 2004. The FDA is proposing new guidlines for gluten-free labeling.
