CLEARGUM® TA 90 is a manioc modified starch made soluble by controlled hydrolysis. It is used to add texture to various nutrition products and can also be used as a fat substitute for low-fat products, as well as a film forming agent. The slightly pink-white powder complies with the Food Chemical Codex and Spec. JECFA-FAO Food & Nutrition Paper 52/9. Properties include:
- Good solubility
- Does not retrograde
- Gives finished products a pleasant taste
Applications include low-fat dairy desserts, low-fat cooking products and cereal cooking products.
