OVOFLASH® Ultra-High Pasteurization (UHP) is designed specifically for the treatment of eggs. This system makes the elimination of all potential pathogenic microorganisms possible. Thermally treated at 74°C, the log reduction is very high. Killing the most resistant germs, the egg product can have a shelf life of up to 12 weeks. This optimization has been achieved not only as a result of heating technology, but as a result of high speed and short residence time also allowed by a fully tubular design. Main technical features include:
- Patented electrical heating system for a high transfer coefficient and very accurate control of the treatment temperature (+/-0.2°C)
- Flash heating with short residence time (30 seconds) and high-speed flow system (5 m/s), preventing the product from being damaged and avoiding deposit
- Tubular design for perfect aspepsis (perfect cleanability)
