Joel Bukiewicz began his company with hunting knives, but soon realized the potential in a line of kitchen knives, considering the swath of chefs in the greater New York area.

Keith Ehrlich is the head of a group called "Made by Hand," which tries to showcase the talents of craftsmen and -women who make real products entirely by hand. In this video, they check out a one-man company called Cut Brooklyn, owned by writer-turned-metalworker Joel Bukiewicz. He builds beautiful and effective knives with a handful of tools, often taking to their edges with nothing more than sandpaper until the finish is just right. The company began with hunting knives, but Joel soon realized the potential in a line of kitchen knives, considering the swath of chefs in the greater New York area. Now that the business has kicked off, he's doing it full-time, and getting better each day.
